Pursuing Career Fresh Out Of High School

The program has definitely widened my perspective in terms of thinking about cooking and food industry. We saw many new things, went on educational trips, and had guest chefs come and share their knowledge with us. All this contributed to the quality of the program; we met chefs with different characters and saw how different their styles can be.

 


You have finished high school and plan on taking a year off? We bring you an interview that will convince you and encourage you to start pursuing your goals right away. Frane Vlašić is still a teenager and has already worked at several hotels and restaurants on the coast, graduated from high school and completed the Culinary Arts program at Kul IN. Read how the program helped him create the foundation for a successful career and find out what's next for him.

Kul IN: Have you always wanted to be a chef?

- Yes, I have always wanted to be a part of the culinary world. I went to a culinary high school in Korčula. The first season I worked in Vela Luka, my hometown, in a hotel. The next year I worked in Korčula and commuted to work every day. I experienced a more modern way of cooking and working while in Korčula and I really liked it. Upon the end of that season, I worked at two other restaurants in Korčula.

Having finished high school, I enrolled in a culinary program at a school in Croatia, but I didn't like the program because it was management-centered rather than being kitchen-focused.

Kul IN: Why did you choose Kul IN?

- Two colleagues of mine, who studied at Kul IN, recommended the program and I decided to enroll.

Kul IN: What are your expectations after the program, how will it help you in your further career?

- The program has definitely widened my perspective in terms of thinking about cooking and food industry. We saw many new things, went on educational trips and had guest chefs come and share their knowledge with us. All this contributed to the quality of the program; we met chefs with different characters and saw how different their styles can be.

Kul IN: Which lesson did you enjoy the most?

- I liked everything we did in practicums.

Kul IN:Where do you see your career in 10 years?

- I would like to open a small restaurant. My idea is to stay on the coast and pursue a career in my hometown and improve the current living situation and the gastronomic scene there. I want it to be a fish restaurant combined with agritourism. I want to work with organic ingredients, therefore, focus on quality rather than quantity.

Kul IN: What do you cook in your spare time?

- I prefer fish.

Kul IN: What does a good chef look like?

- A good chef must be patient and resourceful, as he might end up in a variety of unforeseen situations. He also needs to understand the people he works with, be a good listener and not have a short temper.

 Kul IN: What are your biggest strengths as a chef?

- Patience, speed, resourcefulness, especially considering my age, and ambition.
