Ruža Šimić
Ruža Šimić is an experienced pastry chef and pastry department manager with extensive expertise in the development of both modern and traditional desserts.
She built her professional career as Head Pastry Chef at Noel Bread & Deli, and confirming her pastry expertise at Trinity Sweets. She began her career working in renowned Croatian hotels and pastry shops under the mentorship of distinguished Croatian pastry chefs.
Currently, she leads the pastry department at Kavana Grofica Marica and is responsible for new product development for both the café and Ekos Cakes, where she creates signature cakes and pastries, modern mono-portions, macarons, and contemporary interpretations of traditional desserts.
She specializes in modern French mono-portions, croissants, chocolate pralines, and the development of signature desserts. Her work combines precision, creativity, and strong organizational skills, with a particular focus on developing new flavors, textures, and visual identities for desserts. Her experience in team leadership and staff training further enriches her professional approach and contribution to the contemporary pastry scene.
