New Pastry program

A blend of hands-on training in Croatia and Italian pastry tradition

The Kul IN Culinary Institute and the prestigious Italian school ALMA have jointly developed an international pastry arts program designed for anyone wishing to gain comprehensive professional knowledge, develop practical skills, and explore diverse approaches to modern pastry arts.

The program combines intensive hands-on training at Kul IN with further education at ALMA, an internationally renowned school of culinary arts and gastronomy. Throughout the program, students have the opportunity to learn in two distinct educational environments, connect practical training with European pastry classics and Italian pastry traditions, and apply their knowledge through working with authentic Italian products and techniques.

A program uniting two schools and two approaches to pastry arts

Training begins at the Kul IN Culinary Institute, where students prepare for their studies in Italy through intensive hands-on work and are introduced to European pastry and baking traditions, with a particular focus on French and Central European traditions.

The emphasis is placed on daily work in the pastry lab, mastering both fundamental and advanced pastry techniques, and understanding the processes required to work in a professional pastry environment.

Following the initial phase of training in Croatia, the program continues at ALMA in Italy. The ALMA module is designed to build upon previously acquired knowledge and offer participants content characteristic of Italian pastry and baking traditions.

Who is the program for?

The International Pastry Arts Program is designed for individuals wishing to build a professional career in pastry arts, as well as for those who already have experience and want to further expand their knowledge through an international learning experience.

The program offers an opportunity to develop practical skills, explore diverse pastry traditions, and build a foundation for working in professional pastry shops, restaurants, hotels, bakeries, and other culinary establishments in Croatia and abroad.

Teaching structure

Program Structure

The program is structured to take place in two educational environments, with the option to continue professional development through an internship.

10 weeks – Kul IN Culinary Institute, Croatia
Intensive practical and theory-based training in the pastry lab.

2 weeks – ALMA, Italy
A specialized module focused on Italian pastry and baking, featuring both practical and theoretical instruction.

Return to Croatia
Upon completing the ALMA module, participants return to Croatia, where they can continue their professional journey and enter the seasonal workforce.

Optional two-month internship
Participants have the option to undertake an additional two-month internship in Croatia or Italy.

A Learning Experience in an International Environment

A key value of the program is the experience of studying in an international environment. Time spent at ALMA allows participants to expand their knowledge by working with Italian products and techniques and to discover a different approach to organizing and carrying out pastry and bakery production.

The program includes both practical and theoretical instruction, as well as an educational field trip. The detailed academic content and daily schedule are jointly defined by Kul IN and ALMA, in alignment with the program’s educational goals and available resources.

Program Dates at Kul IN:

Program Dates at ALMA:

  • 18.3.2027. – 5.4.2027.

Price: 11.900,00 EUR (VAT is included in the price)*

*Students who finish the application process at least 2 months before the program starts get the 15% discount.
