Pastry Fast-Track Program

What does the program look like?

The focus is entirely on intensive practical training.

Pastry chefs benefit because in just three weeks they will further refine their techniques for making cakes, pastries, and modern desserts.

Employers will, through this training, be able to elevate the quality and creativity of their pastry teams to a higher level.

Beginners and those who cannot dedicate time to longer programs will appreciate the dynamic pace and short duration of the course, along with the opportunity to quickly acquire practical skills.

WEEK 1 (25 hours of classes in the kitchen)Artisan Bakery
WEEK 2 (25 hours of classes in the kitchen + additional classes)• Cakes/Specialty cakes
• Tarts, mono tarts i monoportions (making mono tartevs i petit fours, decorating and presentation techniques)

Theory classes (wines or cocktails) / field trip

WEEK 3 (25 hours of classes in the kitchen)• Macarons
• Pralines
• Choux

Duration: 3 weeks (75 hours of hands-on training)
